How to Make Simple Delicious Vegan Pesto Butter Veggie Pack!

Ingredients

1. 1 Ear Sweet Corn quartered

2. 2 cups Baby Red Potatoes chopped

3. 1 Large Carrot peeled and chopped

4. 1/2 Red Onion chopped

5. 1 Zucchini chopped

6. 1 Yellow Squash chopped

7. 1/2 Cup Pesto sauce 

8. 1/2 Cup Butter

9. 1/2 Cup Pecan Halves

10. Foil 

 

Steps:

1. Pre-heat grill to medium high heat.

2. Stir pesto and butter in a bowl until mixture is smooth

3. Place two layers of foil and add vegetables with pecan halves

4. Add a few tsp of pesto butter on top 

5. Add another layer of vegetables and drizzle pesto butter on top 

6. Pinch the foil around the edges to make sure foil pack is sealed and not leaking

7. Add 2 more layers of foil on top and pinch the edges to make sure there are no gaps

8. Place on grill for 20-35 minutes, the vegetables should be tender and able to be pierced with fork/knife

9. Add your final drizzle of pesto butter and ENJOY!
